Whole Fruit Leather

This is your modern version of the Fruit Roll-up, with two ingredients, and a great food project to do with your kids. I know, the picture is a little bit horrifying-- but anyone who has been able to take an alluring picture of fruit leather is welcome to send it to me.
Six or seven hours is unquestionably a long time to be cooking/dehydrating something, but through almost all of that time you’re not actually doing anything. Just make sure you're home for the day, set an alarm, and forget about it. The difference between this and most recipes for fruit leather is that we use the whole berry, rather than straining out seeds and skin, to get all of the beneficial fiber.
Prep Time: 7 Minutes
Cooking Time: 6-7 Hours
Yield: Varies
Ingredients:
5 Cups Fresh or Frozen Raspberries, Strawberries and/or Blueberries**
1-2 Tbsp Agave Nectar, Honey, or Maple Syrup
Preheat oven to the lowest possible heat setting (150 degrees is ideal). Process berries and sweetener in a blender or food processor until smooth. (Leave a few chunky bits if you like.) Transfer mixture to a saucepan, bring to bubble, turn down to low and simmer over very low heat, stirring frequently, for about thirty minutes. Line a baking sheet with lightly oiled parchment paper or aluminum foil. Pour thickened mixture onto baking sheet and spread thinly and evenly. Dehydrate for about 5 hours or until the fruit sheet is pliable but not too sticky. Store in a tightly covered container.
