Sweet Potato and Whole Wheat Gnocchi



The picture looks like Kibbles and Bits, which is a shame because this is really tasty.  I switched out the ingredients in a standard recipe for more nutrient-dense ingredients and-- although it may not be something an Italian grandmother would make-- it does may a filling, super-healthy dinner.  Serve tossed with garlic and olive oil, as pictured, or a standard red sauce. 

Prep Time:  5 Minutes
Cooking Time:  30 Minutes
Yield: 4-5 Servings
Ingredients:
3 Large Sweet Potatoes
1-2 Cups Whole Wheat or Spelt Flour
¼ Tsp Sea Salt (plus a pinch for boiling water)
Dash of Paprika
Dash of Grated Nutmeg

Directions:
Bring a large pot of water to boil and add a pinch of sea salt.  Peel the potatoes, cut in quarters, cover with cold water, bring to a boil, reduce heat, cover and cook until tender.  Drain and mash.  For each cup of mashed potato, measure one cup minus 2 tablespoons of flour in a bowl.  Mix with sea salt, paprika and nutmeg.  Add warm potato mash and knead on a floured surface until dough is well mixed. Do not over-knead or the dough will get tough (and really a few whole chunks of sweet potato never killed anyone).  Roll pieces of dough on floured surface into strips about one inch thick and slice into diagonal chunks about ¾ inch long, like little pillows.  Drop gnocchi into boiling water.  Boil until gnocchi rises to the surface and turn heat down to a simmer for about 10 minutes.  Drain well and serve with a good quality tomato sauce or this:

Garlic and Olive Oil with Parmesan
If you really like garlic, mince 1-3 cloves finely and toss gnocchi with garlic, a splash of olive oil, a handful of chopped parsley, sea salt and pepper.    Because the garlic is raw, you’ll get all of the antibiotic and antimicrobial benefits.

    Thank you for posting this recipie! I buy the processed version from Gia Russa regularly, and I'm not a fan of preservative, packaged food. I am really appreciative that now I can make my own WW/SP gnocchi at home

    I followed this recipe exactly as you said but I find all I can taste is the whole wheat flour - it completely overwhelms the taste of the sweet potato. Sad, as I could have just had a delicious sweet potato for dinner! Next time I will try with white flour.
