Nut-crusted Tilapia



Ah, the secret benefits of spices.  Cayenne is great for circulation.  And cinnamon contains manganese, fiber, iron, and calcium. A study in 2003 showed that cinnamon reduces blood sugar levels in diabetics and some individuals with blood sugar issues, which may relate to how it also lowers ‘bad’ cholesterol.  To experiment with the benefits of cinnamon, try adding in a ½ teaspoon per day for several weeks.

Prep Time:  5 minutes
Cooking Time:  10 minutes
Yield:  4 Servings
Ingredients:
1 Lb. Fresh (not previously frozen) Tilapia Fillets or other mild fish
1 Cup Nuts, Finely Chopped or Ground (use almost any:  walnuts, almonds, a mix…)
¼ Tsp Cayenne Pepper
Pinch of Cinnamon
2 Eggs, Beaten
2-3 Tbsp Olive Oil
Sea Salt and Pepper, to Taste
Lemon

Chop or grind nuts and combine with cayenne pepper and cinnamon.  Heat olive oil in a large, heavy-bottomed pan over a medium flame.  Beat eggs.  Dip tilapia in egg and then immediately cover in nut mixture to coat completely.  Place in hot pan and heat for 5 minutes on each side (feel free to pat remaining nuts onto fish as it cooks) or until cooked through.   Dust liberally with sea salt and black pepper.  Squeeze lemon over fish once served.

    My mouth started watering as soon as I read the title and saw the picture. I love fish! I want to make this, but there seems to be a problem between the ingredient list and the instructions. In the ingredients, you have cayenne pepper and cinnamon listed, but in the instructions it says to combine garlic powder, paprika and cinnamon. I'm assuming that since you mentioned the benefits of cayenne and cinnamon before the recipe started, you didn't mean to add the extra ingredients in the instructions. If this is not the case, let me know, so I'll be sure to make it right. =) Thanks for the great recipes...I look forward to trying more!
