Swiss Muesli

This is essentially a method for making oatmeal with no cooking. If you're an oatmeal-a-holic like I can be at times, this is a perfect warm weather/half-the-work alternative. If its not sweet enough, stir in a tablespoon of agave nectar, stevia, raw honey or real maple syrup. The first two are exceptionally easy on the blood sugar. However, you probably won't need to because the raisins really do soak in enough sweetness.
You can also make larger amounts and leave it to be used over five or six days.
Prep Time: 7 Minutes
Cooking Time: None
Yield: 3-4 Servings
Ingredients:
2 Cups Rolled Oats
½ Cup Raisins
1-1/2 Cup Milk (non-dairy or dairy, any type)...or water
1/8 Tsp Cinnamon
Sprinkling of Chopped Nuts or Seeds, any type (optional)
Yogurt (optional)
Sliced Fresh Fruit (optional)
Combine oats, raisins, milk, cinnamon and sweetener (optional). Cover and leave to soak overnight in the refrigerator. When ready to eat, add optional nuts, yogurt and fresh fruit (amount to taste). Serve.

I had forgotten all about this wonderfully delicious and amazingly simple breakfast, thanks for reminding me! I like to make mine with a pinch of sea salt and then mix in grated apple before serving. Making a large batch, as you mentioned, is a great idea so that you can have a good breakfast in the morning with little effort. Just add different fruit/nut combinations for variety.
