Lemon Bars



These were kind of a bitch to figure out, but I've very happy with the results.  And, when I look at the healthiness of the ingredients, I feel confident that a dinner of three lemon bars tonight was a reasonable choice.  They don't taste healthy, but they are, and lemons are so magically cleansing to the liver that we can justify this dessert as a...nutritional supplement.  Yeah, they're sort of like vitamins.        

Prep Time: 15 Minutes
Cooking Time:  40 Minutes
Yield:  About 16 Squares
Crust:
1 Cup Whole Wheat Flour
¼ Cup Agave Nectar or Maple Syrup
2 Tbsp Canola Oil
½ Cup Walnuts
Filling:
3 Eggs
¼ Cup Agave Nectar or Maple Syrup
1/3 Cup Fresh Lemon Juice
2 Tbsp Fresh Lemon Zest
2 Tbsp Whole Wheat Flour
¼ Tsp Sea Salt

Preheat oven to 325 degrees.  Combine all crust ingredients in a food processor and blend until mixture resembles course crumbs.  Lightly grease an 8 inch square baking dish and press mixture into it to cover bottom and about ½” up the sides.  Bake for 15 minutes or until lightly golden.  Remove from oven and raise temperature to 350 degrees.  Beat eggs until fluffy.  Beat in sweetener, lemon juice, lemon zest, flour and sea salt.  Pour into crust.  Bake for about 15-18 minutes or until filling is set.  Cool and cut into bars.  Serve.
