Spearmint Agave Soda



You don't get much more refreshing than sparkling mint soda.  And, unlike crazy high-fructose corn syup based sodas, the agave nectar doesn't send your blood sugar spiking into the treetops and then crashing to the ground. 

Prep Time:  5 Minutes
Cooking Time:  5-7 Minutes
Yield: 4-5 Servings
Ingredients:

½ Cup Agave Nectar
¼ Cup Loosely Packed Fresh Mint Leaves, roughly chopped (I used spearmint, which was nice)
Sparkling Water
Fresh Lemon Slices, optional

Directions
In a small saucepan, heat agave nectar and mint leaves with a ¼ cup of water over medium heat.  Simmer until liquid is reduced by about a third.  Let cool slightly and about stir 1 generous tablespoon or more of mixture into each 8 oz. serving of sparkling water.  Garnish with a fresh lemon slice and/or a few fresh mint leaves, and serve.

      i've been keeping it for a week so far now and it's all good.  i'll let you know beyond that how it goes, but i would think it would keep for a LONG time. 

      btw, please make this with other flavors -- like lemongrass.
