Sweet Mustard Vinaigrette

Just a simple salad dressing or sauce for cooked vegetables.  You probably always have the ingredients in the house, so you can whisk it together at will.

From Cooking the Whole Foods Way by Christina Pirello.  Bless its little heart -- this was the first cookbook to really make me think about the concept of whole foods.

Prep Time:  5 Minutes
Cooking Time:  5 Minutes
Yield:  About 1 Cup
Ingredients:
ΒΌ Cup Good Olive Oil
Dash of Tamari
2 Tbsp Balsamic Vinegar
Juice of 1 Lemon
1 Tbsp Agave Nectar or Honey
2 Tbsp Prepared Mustard
1-2 Cloves Garlic, minced

Directions:
In a small saucepan, warm the oil and tamari over low heat for about 3 minutes.  Whisk remaining ingredients into the oil mixture until emulsified.  Use warm or at room temperature.

Nice and simple vinagrette. I love mustard based vinagrettes.

I never heat my vinagrettes tho, i use a small dressing bottle to shake them to be somewhat emulsified. Much easier, and theyre in a container that allows for smooth application also.
